May's Famous Buttermilk Biscuits
Ingredients:
- 4 1/2 cups flour
- 1 tbsp + 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup COLD COLD butter, cubed
- 2 cups buttermilk
Directions:
1.) Preheat oven to 425 F
2.) In large bowl, whisk together flour, baking powder, baking soda, and salt.
3.) Cut in the cold, cubed butter (I use my hands, just mash it into whisked ingredients.) Should have bread crumb-like texture! The small flecks of butter will melt when cooked and create that buttery-tasting biscuit!
4.) Pour in the milk and stir. Once the dough thickens, knead it with your hands, folding the dough over itself.
At this point, I take it out of the bowl and knead it further on a lightly-flowered counter. It will be a bit tacky but still easy to work with...if not, keep kneading!
5.) Press out dough ball...but not too thin! I like huge biscuits, and the more you roll the dough out, the less they rise...i don't have exact measurements on thickness, but when i cut them out with a mason jar lid, the dough will puff out of the center by a touch!
6.) Cut out with standard mason jar lid, biscuit cutter, etc. I get about 8 big biscuits when cut with a wide-mouth lid!
7.) Put in cast iron pan and cook for 19-20 min; biscuits rise better if they're touching, so don't be afraid to pack them in there!
